Each fall at Casa Lever, we offer a menu of classic Italian dishes to pair with the exquisite white truffles from Alba. Through exclusive connections, Executive Chef Alessandro Caporale has access to the world’s finest and most fragrant fresh white truffles.

The truffle supplier will visit Casa Lever once a week, so that the chef has an opportunity to look over his delicate goods.

Chef Alessandro carefully inspects each truffle to check its aroma, size and shape. Since the prized aroma only reduces over time, truffles must be chosen at their peak. Dampness and improper handling can ruin a truffle. Truffles with rounder “lobes” are easier to store as there is less surface area to spoil.

Truffles are weighed and priced. During the peak season, Casa Lever serves more than a kilogram of truffles a week.

Chef Alessandro gently brushes each truffle with a toothbrush to remove loose dirt and debris. Then, the truffles are ready for tableside service.
